We enjoy serving our guests our wine samplings in the evening here at American Country B&B, and asking them to rate what we serve. We have mentioned some of our favorite local wines (Post Falls) in an earlier post about Timberock, and of course, Coeur d'Alene Cellars also creates several we enjoy.

Serving these hidden gems to our guests has only further promoted our long time hobby of searching for that "squeeze" of wine you are proud to "pour or store and share or pair."

You don't always need an expert to tell you why you should buy their wine, you can do that yourself. You are the one that knows what you like! Tasting these hidden gems has become a hobby of mine!

I'll start with my current fav', not local, but soon to be viral, so stock up now, if you can find it!

Spanish Quarter! Like it says, it's from Spain. It's a 55% Cabernet Sauvignon and 45% Tempranillo. It is made by the Cordoniu Group. You can't miss the label, because it is a complete wrap around showing "Spanish Quarters."

Things To Consider:

Hard to find and almost always a custom order
Experts say it has a bright nose, tastes of plum and black cherries, medium tanins with a long and pleasant finish

The Cypress Cabernet by J Lohr from Paso Robles, CA....another hard to find wine, simply because it is their introductory version. A bargain wine from a great vintner!
Red Diamond, Merlot, from WA. This previewed in 2005 as a restaurant wine and has become a huge Northwest favorite.

Dreamy Recipe For Gingerbread

Gingerbread Recipe

I rarely share a cookie recipe form the B&B, but several of our guests asked if I would share this one! This recipe will be one that you will want to add to your "fav" list!

2 C whipping cream

1 tsp vanilla

2 1/2 C brown sugar (packed)

2 T baking soda

3 tsp ginger

2 tsp curry powder

3 tsp grated lemon peel

2 tsp cinnamon

1/2 tsp salt

1 1/3 C molasses

6-8 C of flour

Whip the cream until it is nice and stiff. Beat in the vanilla. Combine the sugar, lemon peel, spices and salt. Stir in the molasses. Fold in the whipped cream. Gradually add the flour. The dough will be stiff, the more of the flour that you add, the more you will find that your hands are the most effective mixing tools. If you don't add all 8 cups, the dough will tend to spread as it is cooked and your cookie shapes will too. Cover the dough and chill for at least 30 minutes. Roll the dough out on a lightly floured board to about 1/4" thick. Bake at 400 degrees for 6-12 minutes...that is the range for soft to crispy.

These are great for valentine's day, dipped in chocolate after baking. A very popular recipe here at American Country B&B.
This recipe makes a good number of cookies, depending on the size of the cutter
I once made a child sized cookie from this recipe and frosted it in a patchwork design
If you add less flour, these also make a great small gingersnap, if the dough is shaped into little rounds, about teaspoon size.

North Idaho's Gorgeous Gazebo!

North Idaho's Most Gorgeous Gazebo!

If you like the looks of this during the day, you should see it at night with all the hidden lights aglow. From a distance, it appears as though a flying saucer has landed in the yard!

Little did we know as we built this with the help of our dear friend and building guru, Daniel Sheldon, that it would become one of the most popular outdoor areas on our property! Daniel has built another gazebo here in Coeur d'Alene, not far from his first, but large enough to accommodate up to 70 people.

From the eagle weathervane to the wonderful fire-pit, this little piece of heaven has become a gathering place for our guests in the evening. We have often hosted an afternoon get together with snacks and beverages followed by a delightful session of marshmallow toasting!

The project was always a part

of our big plan here at American

Mineral Ridge National Recreation Area

Wow!

What a view!

Early September found everyone in the mood for a little adventure!

Mineral Ridge, with its 3.3 mile trail, was the perfect choice for a leisure afternoon hike. We packed a wonderful picnic for our guests and sent them off with advice to take a jacket and plenty of water.

In 1982, it was designated as a National Recreation Trail. Rising only about 700 feet from the parking lot at an 8% average grade (some parts are about a 15% grade) it seemed like the perfect choice! The Summit is about 2,400 feet, so it's a good hike! Although you have access to the trail year round, it is most enjoyable from April through mid-November! I tell you this, but feel compelled to also tell you that in December through January it is one of the best vantage points to view the annual winter migration of over 150 bald eagles that flock to the area to feed on the spawning kokanee salmon in Lake Coeur d'Alene!

The 22 station markers along the trail provide a lot of stops to take a break and enjoy the views! There are several vantage points with views of Lake Coeur d'Alene and Wolf Lodge Bay!

Bring a lightweight jacket
Take plenty of water
Great picnic spots all along the trail
2-4 hour hike depending on your pace
11 miles E of Coeur d'Alene off I-90 to Wolf Lodge Bay exit (#22) then S on 97 for 3 miles

Waiting For The Return Of The Tree Swallows In Coeur d'Alene

About this time of year, as the snow begins to melt and the grass starts showing through the patchy snow, we begin to think about the return of the wonderful tree swallows in March & April!

They have chosen to grace our veranda each spring with their young, by selecting to nest in our hexagonal birdhouse.

Our guests know it's Spring if they are in the gazebo in the evening, and the highly acrobatic swallows are foraging in flight for all the little flying insects.

We look forward to watching the male bring in all types of nesting material to the female who busies herself with all the housekeeping necessities of setting up the nest. Once the babies are born, we are amazed at the frequent trips both mother and father make to bring in food for their young!

They are such a social bird and the evening skies are a-flutter with all of their activity. It would seem that once the young swallows are about 15 days old, all of their relatives show up to give them flying lessons! What fun to sit on the porch and watch them swoop in to show the little ones just how it is done!

Spring Clean-Up In Coeur d'Alene

The crew is assembled and "Spring Cleaning" is about to begin! After alerting the neighbors on Highland, Up River & River View, the eager group donned their bright orange vests and grabbed a few garbage bags to begin the long awaited clean up of the roads in our neighborhoods!

The weather cooperated this fine March morning, and we were able to complete our mission by mid afternoon!

The quantity of our collections was truly amazing! We hauled quite a number of bags to the pick up point and promised one another to meet up and do this again at the end of the summer season!

Adopt A Road In Coeur d'Alene

Yes, we have joined the ranks of the trained volunteer's to keep our beautiful country road free of litter!

We attended a class provided by the Post Falls Highway District, and learned all about what to do & what not to do! As a result we've adopted a 2 mile stretch of road that extends East and West of our B&B.

After the training class, we received vests, bags and signs to put up next time we clean our area. The really nice thing about working with the Highway District is the fact that they will come by to pick up all the bags that you fill along the roadway after a clean up.

We will schedule a clean up with any volunteers from the neighborhood on Saturday, March 20, 2010, at 11:00. Anyone interested in helping can meet here, and we will have vests and garbage bags for all, just bring your own gloves and pickers. You will have to sign release forms which we will have available that day too.

Hope to see you on the 20th.

Well...it just might be the rolls, buns, cinnamon rolls, pizza crust and bread, all made with locally grown and fresh ground Rathdrum Prairie Hard Red Spring Wheat. You can see the big white bags of wheat right in the photo. They are all made from scratch with no preservatives, shortening, sugar or milk products, and they are fresh and fabulous!

The restaurant is off the beaten path and once you find it, you will keep going back for more!

As a former Library Media Teacher, I am always checking out the local libraries wherever I happen to be visiting.

The wonderful Public Library in Coeur d'Alene is practically brand new, opening September 9th, 2007. The 38,500 square feet of this wonderful facility is divided into a myriad of delightful book nooks, and boasts several fireplaces woven throughout!

The views of the lake and McEuen Park invite you to pull up a chair and relax with a great book. If our guests at American Country Bed and Breakfast need some prolonged time on the Internet, the terrace level offers 38 Internet computers.

The Children's Library holds many surprises for visitors.

The wooden sculptures and paintings of Allen and Mary Dee (Dodge Artworks) fill it with whimsy. The carpeting features bear paws and many animals can be seen throughout the captivating murals that fill the walls. Have you ever hidden inside a beaver dam to read a book.....try it out.....it's a very unique feeling. We were enjoying this fabulous wine from "Timber Rock Winery" even before the tasting room re-opened at 120 N. 4th Street in downtown

Coeur d'Alene! The new tasting room now features a variety of wines from the area!

We were introduced to Timberock at "The Whitehouse Grill" in Post Falls and were able to purchase it at one of our favorite local stores, "Enoteca!"

After Kevin & Michelle chose to share their delightful wine with everyone, we were thrilled to be able to send our guests from "American Country Bed and Breakfast" to the tasting room!

Happily, this wine is handcrafted right here in Post Falls, Idaho, at their mountain home winery. The Rogers family manages many small wine lots that demand individualized care. The results of their labor of love can be tasted next time you visit!

All Aboard Your Bikes In North Idaho.

Yes, that is a photo of Brian and I with our friends, Drew and Tina Williams, (visiting us at American Country B&B) ready to board our bikes and begin riding along one of the most breathtaking scenic stretches of railroad in the country, "The Route of the Hiawatha," in the Idaho Panhandle National Forest.

We wound through ten tunnels and over seven steel trestles ,up to 230 feet high, that gave us a bird's eye view of the treetops below. The tunnel that started our journey, the St. Paul Pass or "Taft" Tunnel, burrowed for 1.6 miles under the Idaho/Montana state line. This is an absolutely pitch black, cavernous tunnel and lights on your bicycles are a must!

The railroad was carved into the Bitterroot Mountains by the "Milwaukee Railroad." The construction of this Pacific extension of the Chicago, Milwaukee and St. Paul Railroad took thousands of workers and was completed in record time in 1911.

Thank goodness the 15 mile ride from the East Portal trail head on this unpaved compacted gravel trail followed a very easy 2% grade downhill, because neither Brian nor I had been on a bicycle for well over 15 years. Of course, we elected to ride the shuttle bus from Pearson back to Roland where we had begun our journey.

Along the trail there are numerous interpretive signs to read that provide information about the rich mining and railroad history. The sharp eyed adventurer will find all types of flora and fauna to photograph.

Usually open through Ocober 5th from 8:30 AM to 6 PM PDT
Day Use Pass required: $9 for 13 & over $5 for those between 3 - 13
Children under 3 are free

Like A Rock In A Park In Post Falls

Q' emiln "ka-mee-lin" Park is Post Falls premiere park. The word Q'emiln is Native American for "Throat Of The River." One of it's big drawing cards is the "Rock Climbing," which several of our guests have enjoyed while visiting the area.

Located on 78.5 acres on the South side of the Spokane River, it is home to some of the finest crags in the Northwest with a single pitch and 5.10 ratings.

The trails are separated by a rock ridge with a face that is fingertip friendly, ranging from beginner to intermediate skill level. Of course, climbing is always at your own risk.

The park serves many other functions for the community. Most popular is the swimming beach staffed with life guards in the summer. The boat launch area is widely used as well, and is a great place to start your water journey East along the Spokane River. The 7,000 square foot Grand Pavilion accommodates many events throughout the year, our favorite is the Fiddle Contest. You can play horseshoes, volleyball, have a barbecue or an old fashioned picnic at this beautiful park.

It Doesn't Get More Farm Fresh Than This

When I'm done preparing & serving breakfast for our guests most Saturday mornings- Spring, Summer and Fall-I sneak off to Northern Idaho's delightful Farmer's Market! The setting is remarkable....on a busy corner of Hwy 95 and Prairie in Hayden, there sits a beautiful grassy corner that is shaded by a stand of old Ponderosa Pines. It seems so out of place, across the street from a busy mall area, but yet there it is..... most incongruously.....yet.....totally what you would hope to find in every small town- as you feel transported to an old fashioned market in the middle of the countryside!

Everything you would expect and more await the early (and not so early) riser, from crafts and flowers to plants and produce. The 50 vendor booths have a rustic buttermilk red paint and the uniformity creates a calmness while the signage allows for the creativity of each marketer. The agricultural products are all local organically grown & produced by family farmers and the food purveyors provide tasty treats throughout the morning. There is a coffee vendor, Jon Lewis, that is much more than what he appears to be....."Long Story Short" is the name of his business, but when you order that latte, which he prepares individually, take a moment to study the artistic details he floats on the surface!

Did I mention the music? Yes, there are wonderful musicians each Saturday on a small stage area with seating nearby. The sounds of the market mingle with the folksy blues performances given by wonderful local artists.

I'm always looking at the wonderful plants Barbara brings to "Nothing But Herbs". My guests enjoy many gleanings from her greenest thumb! "Killarney Farms" always has the most surprising array of fresh produce. The crafts vendors delights are juried and must meet a certain standard to be allowed in the market. I always seem to find just one more thing to add to our elegant country setting waiting for me in the craft booths......I'm hoping one of the triplex birdhouses will find its way to my garden!

Find Your Thrill On Tubbs Hill

Right in the center of downtown Coeur d'Alene, on 135 acres of property owned by the city, you will find 2.2 miles of trails to hike year round..."Tubbs Hill". The hill was dedicated to the people forever in 1969. Talk about accessible...it doesn't get much handier than this! Any time of day is the right time to take this hike. The trail head is well marked and is located by the Third Street Boat Launch in downtown Coeur d'Alene. It is an easy walk, and there are many places on the trail to stop, rest and enjoy the views. Imagine...you can start out your morning with a fabulous walk on the hill, have lunch downtown, shop on Sherman and never have to move your car. The parking area is free for the 1st 2 hours and 1.00 each hour thereafter.

Our guests on vacation here often ask if there is a hiking area that can be climbed after breakfast to work off the calories....Tubbs Hill is not only close, it is beautiful!

The views are what it is all about, and this hike will provide you with vistas of the lake that will make you pinch yourself and ask if you may have glimpsed a bit of heaven. The hill is a awash with color from the wildflowers in the Spring, and the Douglas Fir and Ponderosa Pines keep the trails cool in the summer. You may catch a glimpse of some of our North Idaho wildlife too.....deer, elk, moose, wild turkey and quail. You might consider a summer evening hike....you won't want to miss the sunsets.

No Ticket Needed At This Water Park

Looking for a great place for a picnic, as well as a scenic hike with breathtaking views? Post Falls has the perfect spot....."Falls Park". We are happy to provide a box lunch for our guests who enjoy taking a picnic to many of the wonderful parks in the area.

Site of the "Head Gate" constructed in the 1880's by Frederick Post, the founder of Post Falls. This gate was the method used to divert water from the Spokane River to provide water power for the largest flour mill in North Idaho as well as the first lumber mill in the area. From this small beginning, the area is now home to 3 dams, one of which can be viewed from the parks paved pathways. The Spokane River actually branches into 3 channels with 3 dams, one in each channel near the park. "Falls Park" was dedicated in June of 1993.

The park is located 9 miles downstream from the mouth of Lake Coeur d'Alene.

First of all I have to brag and let you know that the name of this cookbook was submitted by my husband, among a list of many from other members.....his brainchild was chosen!

Yes, this is a cookbook from over 19 different B&B's in Northern Idaho! The best thing about a cookbook like this one is, all the recipes are tried and true! They are also guest favorites that bring rave reviews! This "Whitehouse" Gets My Vote!

You won't want to miss this restaurant if you are visiting the area, just follow your nose! The owner, Raci, will tell you, "If you love garlic, we love you!" This "Whitehouse" has it all, delicious food, affordable prices, wonderful wine list and atmosphere that won't quit! Check this out...on Thursday evenings, about 7 p.m., you might find yourself getting up from the table to join the belly dancing festivities!

The kitchen staff, and owner-chef, have way too much fun to call what they do, work. You can hear them singing and calling out throughout the restaurant. The music is loud, ethnic & fun and you will often find the owner walking through, playing the drum, and asking about your meal.

The food is Mediterranean Cuisine and you must try the Meze (appetizers) before your entre. Our guests enjoy the Turkish "Cigars"....feta cheese and fresh spinach rolled into Filo "cigars" and deep-fried. The menu includes "Tabouleh Wraps" and "Domates Salata"....thinly sliced fresh tomatoes, red onions, basil, Gorgonzola cheese and garlic croutons, tossed with an olive oil vinaigrette dressing. There are some great sandwiches: Gyro's, Chicken Athens and the Lamb Shish-Kebob with rice is fabulous. Of course, everything is prepared with lots of garlic and fresh ingredients, and you can watch while your meal is prepared if you like.

We have to mention dessert, the most wonderful homemade baklava..mmmmmm!

The Best Of Both Worlds

Everyone knows Coldwater Creek has some of the most fabulous clothing around, but did you know that their Flagship store in Sandpoint Idaho also has a wine bar? It is one of our guests favorite day trips from our B&B. A 40 minute scenic drive North on Hwy 95 will put you in the quaint town of Sandpoint. On the West side of the main street through town (First Ave.) sits the historic W. A. Bernd Building, a rustic old brick structure with huge fir beams and rafters. Coldwater Creek renovated this old building, keeping the beautiful bricks and beams and added a slate waterfall to one of the walls. The waterfall has some great leather chairs nearby so the gentlemen can take a break while their spouses model the latest fashions from the store....the waterfall is often jokingly referred to as the "Wall Of Tears."

Imagine...after a few hours of shopping, you can relax on the upper level (accessible by stairs or an elevator) in an engaging environment that feels like another world. This wine bar is truly an escape from reality. You feel as though you have entered an elegant living space in a Western flavored library. Huge overstuffed deep leather chairs and couches spill out into the room whose central focal point is warm inviting fireplace. Low coffee tables are filled with engaging books so you feel as though you've been invited to spend the afternoon lost in a great photo filled book while you enjoy a fabulous glass of wine from an extensive list of varietals.

Did I mention the food? You won't want to miss the panini sandwiches or the wonderful cheese and fruit plate that makes the perfect accompaniment to that great glass of wine.

Big Boys & Girls Toy Playground

Mid June brings "The Classic Car Weekend" to North Idaho! Friday evening from 6-10 p.m. the cruise begins with 100's of 1978 or older, vintage cars cruising downtown. The weather usually cooperates and 1,ooo's of old car buffs fill the sidewalks to watch the event. We really enjoyed seeing our Bed and Breakfast friends dressed in period costumes, driving their 1936 Dodge Touring Car, wooden spokes and all.

The cruise is just the beginning of a festival of fun! Saturday will find the downtown streets filled with beautiful cars as the Downtown Association sponsors a car show from 8-4 p.m.. Many of the cars on the cruise will be there, but many more arrive just for the show.

The weekend is topped off by a Street Dance and Collector Car Auction.

A great vantage point for the cruise and the show is "The Iron Horse." A fun little restaurant with seating that spills out onto the sidewalk. They always have live music and serve some great food.

What a wonderful community we live in...so many great activities and events that involve people of all ages, gathering on the beautiful streets of downtown Coeur d'Alene. Our guest always tell us how much they enjoy the evenings downtown with the great ice cream & gelato vendors on the sidewalks. Now we've added a hot nut vendor who has some of the most delicious candy coated almonds around.

A wonderful rustic Italian dining establishment that has a view of Lake Coeur d'Alene in North Idaho that will long be remembered. It's accessible by car or boat, but the boat mooring is limited. It's tucked away on the East side of the lake in Bennet's Bay.

The restaurant has that warm cozy feeling of intimacy often found in those quiet and quaint cafes of Tuscany. Their love of cooking shows in all the D'Allessandro family prepares & serves.
You may choose to dine indoors or enjoy the lovely weather in the summer, outside on the patio.

We often tell our guests to order an Appetizer not on the menu but available, with a little persuasion, as an appetizer, the fabulous Gnocchi. These little potato dumplings are made in house, and have the most wonderful Gorgonzola cream sauce served with cherry tomatoes. You will also find the Caprese salad a delightful way to start out your dining. La Pasta is the best, especially the Manacotti al Mare (house made and stuffed with Shrimp, Crab and Lobster and topped with a White Clam Sauce). If you have room left, you may want to share II Secondi and select from unique entrees. A favorite with many is the Gamberoni e Fagioli (Grilled Jumbo Tiger Shrimp served with Cannellini Beans cooked in Garlic and Rosemary).
Don't be afraid to take your children, you will find a treasure trove of toys and books in a small alcove available to entertain them.

Arrive By Boat & Dine While You Float:

We wanted to share a dining experience that is "Too Good To Miss" when you visit this area.
This restaurant actually floats on 600,000 pounds of concrete pods which encase a core of Styrofoam. It's located at the mouth of the Spokane River on Blackwell Island in Lake Coeur d'Alene. Cedars Floating Restaurant opened in 1965 and was replaced by the current building in 1991.

Imagine sitting down with a great cocktail or a glass of wine from their extensive collection & fabulous Hors d'oeuvres, (a favorite is the phyllo wrapped baked brie with Huckleberry preserves & thinly sliced Granny Smith apples layered on top with toasted foccacia bread) on the terrace of a restaurant that is actually floating on Lake Coeur d'Alene. Check it out...you can arrive by boat and actually dock right at the restaurant, or arrive by car and walk across the 100 foot long covered foot-bridge, then dine indoors in the rustic wood beamed main dining room or out on the terrace. While you watch all the boat and beach activities on the Lake, you could be enjoying a Salad Bar that offers every condiment you can think of, including candied walnuts, and boasts the areas famous Huckleberries in a dressing. That is just the beginning, our guests rave about the Sea Scallops pan seared in a Gorgonzola Cream Sauce & the Pistachio Encrusted Halibut and the 14 oz. New York Steak finished with a brandy peppercorn cream sauce...and..Oh...the Desserts!!
