We have mentioned some of our favorite local wines (Post Falls) in an earlier post about Timberock, and of course, Coeur d'Alene Cellars also creates several we enjoy. &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Serving these hidden gems to our guests has only further promoted our long time hobby of searching for that "&lt;b&gt;squeeze&lt;/b&gt;" of wine you are proud to "&lt;b&gt;pour or store &lt;/b&gt;and&lt;b&gt; share or pair&lt;/b&gt;." &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;You don't always need an expert to tell you why you should buy their wine, you can do that yourself. You are the one that knows what you like! Tasting these hidden gems has become a hobby of mine!&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;I'll start with my current fav', not local, but soon to be viral, so stock up now, if you can find it!&lt;/div&gt;&lt;div&gt;Spanish Quarter! Like it says, it's from Spain. It's a 55% Cabernet Sauvignon and 45% Tempranillo. It is made by the Cordoniu Group. You can't miss the label, because it is a complete wrap around showing "Spanish Quarters." &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;b&gt;Things To Consider:&lt;/b&gt;&lt;/div&gt;&lt;div&gt;&lt;ul&gt;&lt;li&gt;Hard to find and almost always a custom order&lt;/li&gt;&lt;li&gt;Experts say it has a bright nose, tastes of plum and black cherries, medium tanins with a long and pleasant finish&lt;/li&gt;&lt;li&gt;For more information go to www.thespanishquarter.com :slow loading and sometimes non-op. This recipe will be one that you will want to add to your "fav" list! &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;2 C whipping cream&lt;/div&gt;&lt;div&gt;1 tsp vanilla&lt;/div&gt;&lt;div&gt;2 1/2 C brown sugar (packed)&lt;/div&gt;&lt;div&gt;2 T baking soda&lt;/div&gt;&lt;div&gt;3 tsp ginger&lt;/div&gt;&lt;div&gt;2 tsp curry powder&lt;/div&gt;&lt;div&gt;3 tsp grated lemon peel&lt;/div&gt;&lt;div&gt;2 tsp cinnamon&lt;/div&gt;&lt;div&gt;1/2 tsp salt&lt;/div&gt;&lt;div&gt;1 1/3 C molasses&lt;/div&gt;&lt;div&gt;6-8 C of flour&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Whip the cream until it is nice and stiff. Beat in the vanilla. Combine the sugar, lemon peel, spices and salt. Stir in the molasses. Fold in the whipped cream. Gradually add the flour. The dough will be stiff, the more of the flour that you add, the more you will find that your hands are the most effective mixing tools. If you don't add all 8 cups, the dough will tend to spread as it is cooked and your cookie shapes will too. Cover the dough and chill for at least 30 minutes. Roll the dough out on a lightly floured board to about 1/4" thick. Bake at 400 degrees for 6-12 minutes...that is the range for soft to crispy. &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;b&gt;Things to consider:&lt;/b&gt;&lt;/div&gt;&lt;div&gt;&lt;ul&gt;&lt;li&gt;These are great for valentine's day, dipped in chocolate after baking. Early September found everyone in the mood for a little adventure!&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: left;"&gt;Mineral Ridge, with its 3.3 mile trail, was the perfect choice for a leisure afternoon hike. We packed a wonderful picnic for our guests and sent them off with advice to take a jacket and plenty of water.&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: left;"&gt;In 1982, it was designated as a National Recreation Trail. Rising only about 700 feet from the parking lot at an 8% average grade (some parts are about a 15% grade) it seemed like the perfect choice! The Summit is about 2,400 feet, so it's a good hike! Although you have access to the trail year round, it is most enjoyable from April through mid-November! I tell you this, but feel compelled to also tell you that in December through January it is one of the best vantage points to view the annual winter migration of over 150 bald eagles that flock to the area to feed on the spawning kokanee salmon in Lake Coeur d'Alene!&lt;/div&gt;&lt;div style="text-align: left;"&gt;&lt;br /&gt;&lt;/div&gt;&lt;div style="text-align: left;"&gt;The 22 station markers along the trail provide a lot of stops to take a break and enjoy the views! April!&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;They have chosen to grace our veranda each spring with their young, by selecting to nest in our hexagonal birdhouse. &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Our guests know it's Spring if they are in the gazebo in the evening, and the highly acrobatic swallows are foraging in flight for all the little flying insects. &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;We look forward to watching the male bring in all types of nesting material to the female who busies herself with all the housekeeping necessities of setting up the nest. Once the babies are born, we are amazed at the frequent trips both mother and father make to bring in food for their young! &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;They are such a social bird and the evening skies are a-flutter with all of their activity. It would seem that once the young swallows are about 15 days old, all of their relatives show up to give them flying lessons! After alerting the neighbors on Highland, Up River &amp;amp; River View, the eager group donned their bright orange vests and grabbed a few garbage bags to begin the long awaited clean up of the roads in our neighborhoods!&lt;div&gt;&lt;br /&gt;&lt;div&gt;The weather cooperated this fine March morning, and we were able to complete our mission by mid afternoon! &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;The quantity of our collections was truly amazing! As a result we've adopted a 2 mile stretch of road that extends East and West of our B&amp;amp;B.&lt;br /&gt;&lt;br /&gt;After the training class, we received vests, bags and signs to put up next time we clean our area. The really nice thing about working with the Highway District is the fact that they will come by to pick up all the bags that you fill along the roadway after a clean up.&lt;br /&gt;&lt;br /&gt;We will schedule a clean up with any volunteers from the neighborhood on Saturday, March 20, 2010, at 11:00. Anyone interested in helping can meet here, and we will have vests and garbage bags for all, just bring your own gloves and pickers. The tunnel that started our journey, the St. Paul Pass or "Taft" Tunnel, burrowed for 1.6 miles under the Idaho/Montana state line. This is an absolutely pitch black, cavernous tunnel and lights on your bicycles are a must!&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;img id="BLOGGER_PHOTO_ID_5293232250532424706" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 400px; CURSOR: hand; HEIGHT: 255px; TEXT-ALIGN: center" alt="" src="http://3.bp.blogspot.com/_xE73-q93Qio/SXVWr-agbAI/AAAAAAAAAHk/RX_RVvWMnqE/s400/DSC08899.JPG" border="0" /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;&lt;br /&gt;The railroad was carved into the Bitterroot Mountains by the "Milwaukee Railroad." The construction of this Pacific extension of the Chicago, Milwaukee and St. Paul Railroad took thousands of workers and was completed in record time in 1911.&lt;br /&gt;&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;Thank goodness the 15 mile ride from the East Portal trail head on this unpaved compacted gravel trail followed a very easy 2% grade downhill, because neither Brian nor I had been on a bicycle for well over 15 years. The word Q'emiln is Native American for "Throat Of The River." One of it's big drawing cards is the "Rock Climbing," which several of our guests have enjoyed while visiting the area.&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;Located on 78.5 acres on the South side of the Spokane River, it is home to some of the finest crags in the Northwest with a single pitch and 5.10 ratings. &lt;/div&gt;&lt;div&gt;The trails are separated by a rock ridge with a face that is fingertip friendly, ranging from beginner to intermediate skill level. Of course, climbing is always at your own risk. &lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;The park serves many other functions for the community. Most popular is the swimming beach staffed with life guards in the summer. The boat launch area is widely used as well, and is a great place to start your water journey East along the Spokane River. The 7,000 square foot Grand Pavilion accommodates many events throughout the year, our favorite is the Fiddle Contest. You can play horseshoes, volleyball, have a barbecue or an old fashioned picnic at this beautiful park.&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;strong&gt;Things To Consider:&lt;/strong&gt;&lt;/div&gt;&lt;ul&gt;&lt;li&gt;Located at 12201 W. The setting is remarkable....on a busy corner of Hwy 95 and Prairie in Hayden, there sits a beautiful grassy corner that is shaded by a stand of old Ponderosa Pines. It seems so out of place, across the street from a busy mall area, but yet there it is..... most incongruously.....yet.....totally what you would hope to find in every small town- as you feel transported to an old fashioned market in the middle of the countryside!&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Everything you would expect and more await the early (and not so early) riser, from crafts and flowers to plants and produce. The 50 vendor booths have a rustic buttermilk red paint and the uniformity creates a calmness while the signage allows for the creativity of each marketer. The agricultural products are all local organically grown &amp;amp; produced by family farmers and the food purveyors provide tasty treats throughout the morning. There is a coffee vendor, Jon Lewis, that is much more than what he appears to be....."Long Story Short" is the name of his business, but when you order that latte, which he prepares individually, take a moment to study the artistic details he floats on the surface!&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Did I mention the music? Yes, there are wonderful musicians each Saturday on a small stage area with seating nearby. The sounds of the market mingle with the folksy blues performances given by wonderful local artists.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;I'm always looking at the wonderful plants Barbara brings to "Nothing But Herbs". My guests enjoy many gleanings from her greenest thumb! "Killarney Farms" always has the most surprising array of fresh produce. The crafts vendors delights are juried and must meet a certain standard to be allowed in the market. The parking area is free for the 1st 2 hours and 1.00 each hour thereafter.&lt;br /&gt;&lt;br /&gt;Our guests on vacation here often ask if there is a hiking area that can be climbed after breakfast to work off the calories....Tubbs Hill is not only close, it is beautiful!&lt;br /&gt;&lt;br /&gt;The views are what it is all about, and this hike will provide you with vistas of the lake that will make you pinch yourself and ask if you may have glimpsed a bit of heaven. The hill is a awash with color from the wildflowers in the Spring, and the Douglas Fir and Ponderosa Pines keep the trails cool in the summer. You may catch a glimpse of some of our North Idaho wildlife too.....deer, elk, moose, wild turkey and quail. This gate was the method used to divert water from the Spokane River to provide water power for the largest flour mill in North Idaho as well as the first lumber mill in the area. From this small beginning, the area is now home to 3 dams, one of which can be viewed from the parks paved pathways. The Spokane River actually branches into 3 channels with 3 dams, one in each channel near the park. The menu includes "Tabouleh Wraps" and "Domates Salata"....thinly sliced fresh tomatoes, red onions, basil, Gorgonzola cheese and garlic croutons, tossed with an olive oil vinaigrette dressing. Friday evening from 6-10 p.m. the cruise begins with 100's of 1978 or older, vintage cars cruising downtown. The weather usually cooperates and 1,ooo's of old car buffs fill the sidewalks to watch the event. We really enjoyed seeing our Bed and Breakfast friends dressed in period costumes, driving their 1936 Dodge Touring Car, wooden spokes and all.&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;The cruise is just the beginning of a festival of fun! Saturday will find the downtown streets filled with beautiful cars as the Downtown Association sponsors a car show from 8-4 p.m.. Many of the cars on the cruise will be there, but many more arrive just for the show.&lt;br /&gt;&lt;/div&gt;&lt;div&gt;The weekend is topped off by a Street Dance and Collector Car Auction.&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;A great vantage point for the cruise and the show is "The Iron Horse." A fun little restaurant with seating that spills out onto the sidewalk. They always have live music and serve some great food.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;What a wonderful community we live in...so many great activities and events that involve people of all ages, gathering on the beautiful streets of downtown Coeur d'Alene. Our guest always tell us how much they enjoy the evenings downtown with the great ice cream &amp;amp; gelato vendors on the sidewalks. It's accessible by car or boat, but the boat mooring is limited. It's tucked away on the East side of the lake in Bennet's Bay.&lt;br /&gt;&lt;br /&gt;The restaurant has that warm cozy feeling of intimacy often found in those quiet and quaint cafes of Tuscany. Their love of cooking shows in all the D'Allessandro family prepares &amp;amp; serves.&lt;br /&gt;You may choose to dine indoors or enjoy the lovely weather in the summer, outside on the patio.&lt;br /&gt;&lt;br /&gt;We often tell our guests to order an Appetizer not on the menu but available, with a little persuasion, as an appetizer, the fabulous Gnocchi. These little potato dumplings are made in house, and have the most wonderful Gorgonzola cream sauce served with cherry tomatoes. You will also find the Caprese salad a delightful way to start out your dining. La Pasta is the best, especially the Manacotti al Mare (house made and stuffed with Shrimp, Crab and Lobster and topped with a White Clam Sauce). If you have room left, you may want to share II Secondi and select from unique entrees. It's located at the mouth of the Spokane River on Blackwell Island in Lake Coeur d'Alene. Cedars Floating Restaurant opened in 1965 and was replaced by the current building in 1991.&lt;br /&gt;&lt;br /&gt;Imagine sitting down with a great cocktail or a glass of wine from their extensive collection &amp;amp; fabulous &lt;span style="font-family:georgia;"&gt;H&lt;/span&gt;&lt;span style="font-family:georgia;"&gt;ors d'oeuvres&lt;/span&gt;, (a favorite is the phyllo wrapped baked brie with Huckleberry preserves &amp;amp; thinly sliced Granny Smith apples layered on top with toasted foccacia bread) on the terrace of a restaurant that is actually floating on Lake Coeur d'Alene. Check it out...you can arrive by boat and actually dock right at the restaurant, or arrive by car and walk across the 100 foot long covered foot-bridge, then dine indoors in the rustic wood beamed main dining room or out on the terrace. While you watch all the boat and beach activities on the Lake, you could be enjoying a&lt;span style="font-family:georgia;"&gt;&lt;strong&gt; &lt;/strong&gt;S&lt;/span&gt;&lt;span style="font-family:georgia;"&gt;alad&lt;/span&gt;&lt;span style="font-family:georgia;"&gt; Bar&lt;/span&gt; that offers every condiment you can think of, including candied walnuts, and boasts the areas famous Huckleberries in a dressing.
